THE CHEESEBOARD LUNCH BOX

Today’s lunch box is The Cheese Board Lunch Box. This one is for everyone who would rather eat a charcuterie platter as an appetizer instead of a meal. This lunch box will tempt you to have a glass of wine with your lunch.

WHERE ARE THE VEGETABLES??

Yes, I know. Although I am a vegetarian-with-every-meal type of person, I believe it is possible to eat a cheeseboard lunch box while maintaining balance. You can eat a heavy vegetable-rich breakfast, such as my Vegetable Breakfast Scrambles. Also, include a vegetarian-rich dinner like a stir-fry or soup. You can also pack a side salad for your lunch box. 🙂

WHAT ELSE CAN YOU ADD TO YOUR CHEESE BOARD LUNCH BOX

Like all these other no-cook lunch box ideas, this Cheese Board Lunch Box is flexible! These are some additional items that you can add to or replace any of the ingredients in my Cheese Board Lunch Box:

  • Pickles
  • Grapes
  • Slices of apple
  • A small container of your favourite jam
  • A small container of jam
  • A small pot of pesto
  • Olives
  • Almonds
  • Dry cherries or dried cranberries
  • Bell peppers sliced

OTHER MEAT OPTIONS

Although I used salami for my cheese board lunchbox, there are many options. Other cured meats can be used, such as prosciutto and capicolaSoppressata is also available. You can also use regular deli meat if you don’t have the time or cannot find it. You can roll the slices into “cigars” to make it extra special. This will give you the feeling of eating a special lunch.

FRESHNESS: WRAP THE CRACKERS

Wrap your crackers in waxed paper or a fold-top sandwich bag to preserve their crunch. This was not something I did because I was lazy. However, I enjoyed the crackers quite a lot over the next four days.

What CONTAINERS DO YOU USE

These containers, made by Pyrex, are my favourite meal prep container. They are not divided, but the one compartment makes them extremely versatile. The lid snaps on easily and doesn’t have any moving parts. Below is a link to these containers.

This simple, no-cook lunch idea will please cheese lovers around the world. The Cheese Board Lunch Box is a great way to make savoury snacks into a delicious meal.

INGREDIENTS

  • 8 oz. 8 oz.
  • 4 oz. salami ($1.99)
  • 20 crackers ($0.74)
  • 16 dried apricots ($1.40
  • 1 cup walnuts (1.20)

INSTRUCTIONS

  • Cut the cheese. Wrap 5 sets of crackers in waxed or fold-top sandwich bags.
  • Divide the cheese salamis, wrap crackers, dried Apricots, walnuts and wrapped crackers between four containers. You can refrigerate the cheese salami, wrapped crackers, dried apricots, and walnuts until you are ready to eat or for up to five days.
