SWEET CORN SALSA

This recipe will show you that fresh sweet corn is something you absolutely must try. The best part of summer is fresh sweet corn. It’s deliciously sweet, crunchy and juicy when raw. This Fresh Sweet Corn Salsa allows you to get in on the sweet corn goodness.

What’s in Corn Salsa?

I prefer simplicity in my life, so I made my corn salsa very simple. It was almost like a pico con Gallo with corn. It contains fresh sweet corn, tomatoes and red onions, jalapenos, cilantro, lime juice, salt, and herbs. That’s it! It has my favourite flavours: salty, sweet, acidic and spicy.

FRESH CORN IS SUFFICIENT?

Although you don’t need fresh corn to make this salsa, it will enhance the flavour. Frozen corn is a great alternative if you don’t have fresh corn or want to make salsa during the off-season. Cannellini corn is not recommended for this recipe. It can be too sweetened with sugar or salt and ruin the flavour.

Grilling corn first gives the salsa a smokey flavour. You can also do the usual boil, steam or oven roasting.

WHAT ELSE CAN I ADD?

Here are some great corn salsa flavours to spice it up.

  • Avocado (the fat will help to balance the heat nicely).
  • Cotija cheese
  • If you need to sub red onion for green onion, green onion is a great substitute.
  • Black beans
  • Red bell pepper

CORN SALSA – HOW TO SERVE IT

Corn salsa can be used as a side dish or a condiment. It can be served as a side dish or on dishes. It was served on top of my Fish Tacos this week, but you could also serve it with Easy Cilantro Chicken Enchiladas or Beef Taco Skillet.

SWEET CORN SALSA

Summersweet corn is the perfect salsa to add to salads, tacos and bowl meals.

Servings: Each 1/2 cup

INGREDIENTS

  • 3 ears sweet corn (0.90)
  • 2 Roma tomatoes ($0.93)
  • 1/4 cup diced red onions ($0.07)
  • 1 jalapeno ($0.07)
  • 1/4 cup chopped cilantro ($0.17)
  • 1 Fresh lime (2 Tbsp of juice) ($0.50
  • 1/2 tsp salt ($0.02)

INSTRUCTIONS

  • Take out the silk and husks from the fresh corn. To make a stable, flat surface for the corn ear, cut the stem from the bottom. To remove the kernels, stand the ear of corn straight up, with the stem facing down. Place the sliced kernels into a large bowl.
  • Chop the tomatoes. Take out the seeds of the jalapeno and then dice the tomatoes. Finely chop the red onion and the cilantro. Toss the tomatoes, jalapeno and onion with the cilantro.
  • The lime juice should be strained and drizzled on top of the vegetables. Add the salt, stir everything well, and adjust the lime juice or salt according to your taste. Serve immediately
