What Potatoes are Best for Roasting?
Today I went a bit fancy and purchased these tri-coloured baby potatoes from Aldi. They are more expensive than your standard russet but make such pretty presentations, and I love the delicate texture. This recipe can be made with any potato. Do you see what I mean when I say flexible?
You can use russet, red, or Yukon gold potatoes to cut down on the cost of this recipe. Make sure to cut the potatoes into 3/4 inch pieces, regardless of what variety. How long it takes to roast potatoes depends on their size.
HOW TO SEASON ROAST POTATOES
Absolutely! You can substitute rosemary for your favourite herb if you don’t like it or don’t possess any. This recipe is very flexible. You can use fresh or dried herbs and any combination you prefer.

INGREDIENTS
- 1.5 lbs. potatoes* ($2.99)
- 1 Tbsp olive oil ($0.16)
- 2 cloves minced garlic ($0.16)
- 1 tsp dried rosemary (0.10)
- 1/2 tsp salt ($0.02)
- Freshly cracked pepper ($0.03)
- 1 tablespoon chopped parsley (optional) ($0.12)
INSTRUCTIONS
- Preheat the oven to 400°F. Wash the potatoes and cut them into pieces or cubes of 3/4 inch.
- Add the chopped garlic, rosemary, salt and freshly cracked pepper to the potatoes. This will take about 15 cranks from a pepper mill. Toss the potatoes in olive oil, minced garlic, dried rosemary, salt and some spices until evenly coated.
- Place the potatoes on a baking sheet. Place the potatoes in the oven for 15 minutes. Stir and bake for another 15 minutes.
- Stir the mixture once more after 30 minutes of roasting. If you need additional browning, roast for another 5-10 minutes. Sprinkle a few chopped fresh parsley over the top, if you like.

*You can use any variety of potatoes you want, but make sure to cut them into small, even cubes.
