Reuben Casserole

I’m not sure there’s anything more enjoyable than transforming classic sandwiches into casseroles. It’s okay to reread that sentence and question our fun scale, but we want you to know that this weird, wonderful, cheesy, buttery bready pan is an A+ good time, and we are not sorry.

The buttery pumpernickel toast that crisps in the oven is accompanied by long slivers of Swiss cheese and tender corned meat tucked into and around Thousand Island sauce. There’s also tangy, briney sauerkraut in every bite because Reuben keeps his promises.

Reuben Casserole Recipe Ingredients

The origins of Reuben sandwiches are a subject that is incredibly fascinating and intense. Did you know that there is a “National Sandwich Idea Contest”? “There is, and Reuben won. You need to sign all of them.

  • Pumpernickel Bread & Butter
  • sauerkraut
  • Swiss cheese
  • Thousand Island dressing
  • Corned beef
  • Fresh parsley, onion, and caraway seeds

How to Make Reuben Casserole

Reubens are supposed to be a mess. A baking dish would be the perfect solution. With all the corned meat and cheese and sauerkraut spilling out, not to mention the Thousand Island dressing dripping down the sides.

  1. Bread and Butter. In a large bowl, combine bread cubes and melted Butter. Layer half of the mixture of bread and Butter on the bottom of a baking dish, then bake until crisp.
  2. Sauerkraut. Sauerkraut. Combine sauerkraut with onion, parsley and caraway seeds.
  3. Corned Beef & Swiss Once you have removed the dish from the oven, begin layering the following in the correct order: sauerkraut 1000, Swiss 1000, corned beef, Swiss 1000, sauerkraut 1000, Swiss 1000, Swiss 1000, Swiss 1000, then the remaining bread cubes. Bake!
  4. Thousand Island. Sprinkle with parsley and a bit more dressing.

What to serve with this casserole

You might also want to consider this easy green salad. You could roast some vegetables in your oven, perhaps some crispy roasted broccoli or cauliflower. Oh oh! Are fries available? What a great idea!!

Ingredients

Reuben Casserole:

  •  10 – 12 Slices Rye or Pumpernickel Bread, cubed (about 4 – 5 cups)
  •  1/2 Butter, melted
  •  1 pound. You can also find out more about the following: sauerkraut Drainage
  •  1/2 Fresh parsley, chopped. (and some more for the topping)
  •  Two teaspoons of caraway seeds
  •  3 Swiss cheese. shredded
  •  1 R Reuben sauce
  •  One pound of Corned beef. You can use corned meat if you don’t have any on hand, or you can substitute it with pastrami.

Reuben Sauce (VERY delicious):

  •  1 Mayo
  •  1/4 Ketchup
  •  Two teaspoons horseradish
  •  Two teaspoons Worcestershire
  •  One teaspoon sriracha
  •  Half a teaspoon Paprika
  •  1 Small Businesses The shallot Grated or minced
  •  Salt Taste

Instructions

  1. Heat oven to 350 degrees F. In a large bowl, combine bread cubes and melted Butter.
  2. Taste and adjust the sauce.
  3. Combine the parsley and caraway seeds in a separate bowl.
  4. In a 9×13-inch baking dish, layer half the mixture of bread and Butter. Remove the word from the oven after 10 minutes.
  5. The remaining ingredients can be layered on top of the bread cubes. The order that I follow is corned meat, sauerkraut, and cheese, then sauce. Finish off with some more cheese and any remaining bread cubes. Bake for 35 minutes.
  6. Sprinkle with parsley and drizzle with sauce.
