Oven roasting is my favourite way of cooking vegetables, including fresh sweet corn. The fresh ears are best roasted in their husks to preserve their sweetness and keep them juicy. It’s also very simple. Although I added honey chilli butter to the roasted corn, it tastes so much better.
WHY ROAST IN A HUSK?
The corn will be super juicy if you leave the husk on while roasting. It is truly incredible. After the corn is roasted, the silk and husks are easily removed to be ready for you to eat within minutes.
HOW TO CHOOSE GOOD FRESH CORN
Fresh corn is best because it is the sweetest and most delicious in season. Older corn may be more starchy and dry than sweet. For fresh corn, you want husks that are brightly coloured, tightly against the cob, not dry or brown. The silk should not be sticking out of the top. It should look moist and fresh.
WHAT TO SERVE WITH OVEN-ROASTED CRIN
You can give me sweet, sweet corn all by itself. This is not a balanced meal. Here are some options for what to serve with this delicious corn: Fish Tacos with Cumin Lime Coleslaw; Baked Beef and Black Bean Tacos; Cilantro Lime Chicken.
ABOUT THE HONEY CHILI BUTTER…
Honey chilli butter is a wonderful addition to the delicious roasted corn. It’s sweet and spicy but creamy, just like a dream. The level of heat in honey chilli butter depends on the chilli powder. McCormick is milder than others, while McCormick can pack a lot of heat. You can keep your honey chilli butter leftovers in the refrigerator for two weeks.
OVEN-ROASTED CORN WITH CHILI BUTTER HONEY
A summer favourite is an ear of oven-roasted corn with honey chilli butter. It’s super sweet and juicy.
Prep time: 5 minutes
Cooking Time: 35 minutes
Total Time: 40 minutes
Servings: 1 ear per person
INGREDIENTS
- 4 ears of fresh corn (1.20)
- 4 Tbsp butter at room temperature ($0.37)
- 1 Tbsp honey ($0.12)
- 1/2 tsp chili powder ($0.05)
- 1/8 tsp salt ($0.01)
INSTRUCTIONS
- Pre-heat the oven to 350oF. To prepare the corn ears, cut off the tip of each ear.
- Place the ear of corn in a baking dish and place them on the rack. Bake for 35 minutes.
- The honey chilli butter can be made while the corn roasts. Combine the butter, chilli powder and honey in a small bowl. Season with salt. Use a fork to combine the ingredients until they are smooth and uniform.
- After 35 minutes, the corn husks should look slightly brown and papery. Use oven mitts or a towel to remove the corn from the oven gently. Allow them to rest for five minutes. Then, gently pull the husks back and remove any silk.
- Serve warm with a bowl of honey butter to drizzle over the kernels before you eat.
