It felt wrong to keep this smoothie from you, so I decided it was time I shared it with you on my blog.
This recipe requires 5 minutes, one blender, and nine ingredients. (That I have at my disposal all the time – this is serious).
This green smoothie is the perfect balance of sweet and tart. I usually prefer the more adorable versions, but the lime and ginger juice in this recipe has me craving it. This smoothie is the perfect combination of sweet and tart, thanks to the greens, coconut milk, and fruit. I will never tire of this flavor combination.
It’s our morning smoothie of choice if I don’t make a Smoothie Bowl. This smoothie is perfect, just as it is. However, you can add vegan protein powder to make it even better (although I haven’t yet found one that I like and doesn’t upset my stomach).
Ingredients
- The original recipe calls for one small knob of fresh ginger.
- Juice 1/2 medium lime or lemon (this yields about 1 Tbsp, or 15 ml, according to the original recipe).
- Light coconut milk (from the can or carton).
- 1 1/2 cups frozen pineapple, chopped (as ripe and sweet as possible)
- One frozen banana (small, mature, peeled, and sliced)
- One large handful of spinach* (organic if likely)
- Kale, one small handful (organic if likely)
- Unsweetened plain almond milk, 2/3 cup
- Add more water if necessary to thin.
- 1 Tbsp of flaxseed meal, optional
- Hemp seeds, raw (optional).
- Use 1 tbsp of maple syrup or agave ( optional / depending on sweetness)
Instructions
- Blend all ingredients in a blender, following the list. Add more almond milk or water if it doesn’t blend.
- Blend for at least 1-2 minutes at high speed. This will ensure that everything is well combined.
- Add more sweetener or frozen banana to the dish if you want it sweeter. You can also add lime juice if you prefer acidity or coconut milk if you like creaminess.
- Serve immediately. Keep leftovers in the refrigerator for up to 24 hours. They are best when they are fresh.
