It has been so cold lately. I’ve been hibernating under our kotatsu (a Japanese heated dining table covered with a blanket to trap the warmth of Japan) and eating bowl after bowl of creamy chicken alfredo.

Regular alfredo can also be super easy and takes only 15 minutes, but this recipe is the type that you throw everything into a pot and leave it alone. It’s packed with juicy chicken pieces, perfectly cooked noodles, and a rich sauce that sticks to every bite of pasta. This is satisfaction in a bowl; it can all be made in an instant pot.

In an instant pot, you can make pasta.

Yes! Yes! It will absorb the delicious creamy sauce you pressure cook it in while it cooks. The starches that are released thicken the sauce and make it stick to the pasta. It’s easy to cook pasta in an instant pot.

How to make chicken Alfredo in an Instant Pot

  1. Add the chopped chicken, penne, pasta of your choice, chicken stock, and garlic powder to an insert in the instant pot. Mix well and cook for 5 minutes under high pressure.
  2. While your instant pot is heating, combine some cream and a little cornstarch in a small bowl. This is the time to grate the parmesan cheese finely.
  3. Once the instant pot has finished, quickly release the pressure and open the lid. Place the instant pot on saute mode and add the cream-cornstarch mixture and butter. Continue to simmer, occasionally stirring, until the mixture becomes slightly thickened. Once the noodles have become creamy and coated with the cream-cornstarch mix, go in the parm. Season, then spoon the noodles into a bowl.

Creamy chicken alfredo ingredients

This recipe is so easy to make and only has nine ingredients! You could even leave out the parsley! You will need chicken, pasta, chicken stock, and chicken broth.

  • The chicken I used chicken thighs because I love the juicy flavor. But you can also use chicken breast.
  • Penne Short pasta works well in an instant pot. Penne is perfect because it fills up with lots of saucy goodness. You can wear any pasta shorts or fettuccine here. If you use fettuccine, you must cut the pieces in half.
  • Cream and cornstarch– We’ll make our sauce shine with heavy cream and cornstarch. The cream will give everything a creamy texture and thicken it with cornstarch.
  • Parmesan: Go for freshly grated! It melts and tastes much better than pre-grated products you can buy in the grocery store.
