What is corned meat?
Before we dive into the hash, what exactly is corned meat? Corned Beef is salt-cured brisket, pickled with spices and then boiled until it reaches tender, juicy perfection. Corned Beef is called that because it’s made from giant grains of rock salt. Corned Beef can be eaten with potatoes and cabbage, as a sandwich, or as a breakfast dish as the hash.

You don’t have to make corned Beef yourself ( it is straightforward), but you can buy it in the meat section at Costco or your local grocery store. They sell it ready-to-cook. It can also be found at your local butchers or delis, especially during St. Patrick’s Day.
Canning corned beef
You can also purchase canned corned meat. This is entirely different from whole cuts of corned cattle. Canned corned meat is minced and then preserved in cans. This is the corned Beef most diners use to make their hash.
How to make corned meat hash
- Prepare. Cut up your shallots and corned Beef. Halve some potatoes.
- Cook the potatoes. Add the potatoes, cut side down, to a large non-stick pan or cast iron. Cook until crisp and golden.
- Heat. Add the garlic, shallots, and beef stock to a saucepan. Reduce heat to low, cover, and cook the potatoes until they are tender and creamy.
- Make sure the crust is crispy. Remove the lid and drain any liquid. Stir in the corned Beef and some rosemary, and cook until it is hot and crispy.
- Put an egg on it. Make a nest, fry them in the oil, then scramble them. You can also make sunny-side-up eggs in a different pan or soft boil, poach, or bake them.
- Enjoy!
Ingredients
Corned beef hash is a classic dish. It consists of cooked corned meat, onions, potatoes, and eggs. Bell peppers can be added to the recipe. Although we prefer homemade corned Beef for our hash dishes, many people prefer canned.
Eggs
Technically, you don’t require eggs to make hash. The hash is made of onions, potatoes, and corned meat. However, eggs and hash are compatible with mac and cheese.
The eggs can be prepared in your preferred way. You can fry them in a separate pan, saute them in the hash or make little nests before cooking them in the skillet. We like our soft, jammy-boiled eggs. The creamy yolks go well with the crispy, salty Beef and potatoes.
Suitable sides
- Garlicky texas toast!
