The leftovers from last night’s dinner are used to make this budget-friendly, affordable, and delicious meal. It takes only 15 minutes. BOOM.
Add leftover rice to your favorite salsa (whether it’s homemade or store-bought), then top with cheese and beans.
The cheesy, ooey-gooey crust will be on top.
You can also add other bean varieties to your taste. You can do whatever you want!
You can also add leftover carnitas, roasted chicken, or even leftover carnitas.
You can also drizzle guacamole or sour cream on top. The possibilities are endless.
Ingredients
- 1 cup uncooked rice
- 1 cup salsa, either store-bought or homemade
- Juice of one lime
- Fresh cilantro leaves chopped into two tablespoons
- One 15-ounce black bean can, rinsed and drained
- 3/4 cup shredded cheddar cheese
- 3/4 cup shredded mozzarella cheese
Instructions
- Preheat oven to broil. Use nonstick spray or lightly oil an 8×8 or 2-quart baking dish.
- Cook rice in a large pan with 2 cups of water according to the package directions. Stir in the salsa, lime, and cilantro.
- Spread the rice mixture in the baking dish. Add beans and cheese to the top. Place in oven and bake for 5 minutes or until cheeses are melted and bubbly.
- Garnish with cilantro if you wish.
