Although there are many ingredients involved in this dish, I recommend using a majority of the pantry staples if you’re a seasoned cook. Don’t worry if this is your first time trying these ingredients. Your local supermarket has them all, and they have a shelf life that will allow you to make this dish again.

Once the meat has been seared, remember that color is what makes the dish unique. All you have to do is measure and weigh the ingredients. Then put them in an oven-proof dish. It’s that easy to make slow-cooked beef cheeks!!
CARROT PUREE
Making a puree is easy. Chop your veggies into even-sized pieces. To allow the ginger flavors to shine through in cooking, I prefer mine to be approximately an inch thick. To the pot, add a knob of ginger and the stock. Stir until the vegetables are tender. Once the carrots are tender, add the braising liquid and ginger to a blender. Add a knob of butter to the blender and blend until smooth.
For a silky texture, run the puree through a sieve!
NAM JIM DRESSING
Again, it’s not difficult to find the ingredients. It is easy to just blend everything in a blender. Take your coriander, chili, lime, fish sauce oil, garlic, spring onions, sugar, and oil. Let the blender/food processor do the rest.

Follow my instructions for reheating. Although the puree can be frozen, I recommend that you make the nam jim as fresh as possible!
