This banana bread flavoured baked oats recipe is a great way to make a quick breakfast for the week, even if your brown bananas aren’t quite as good. BONUS: it’s freezer-friendly!

WHAT IS BAKED OATMEAL?

Baked oatmeal is a delicious and rich breakfast option. It is oats baked into a custard. It’s similar to bread pudding but with oats in place of bread. Baked oatmeal is a great alternative to oats, which can be gummy when boiled with water. It is soft, rich, and moist but not too gooey. People mistakenly believe that baked oatmeal is crunchy.

HOW TO STORE LEFTOVERS

The recipe makes quite a large batch, so it’s best to keep the leftovers. Baked oatmeal should be refrigerated immediately after it is cooked. After baking my baked oatmeal, I prefer to separate it into individual servings and then store them in individual containers. Baked oatmeal can be kept in the fridge for up to 5 days or frozen for approximately 3 months.

HOW TO SERVE BANANA BREAD BAKED OATMEAL

You can eat baked oatmeal hot or cold. It can be eaten as is, or you can add cold milk. You can also drizzle maple syrup on top if you prefer things sweeter.

CAN I USE STEEL CUT OATS

This recipe cannot be substituted for steel-cut oatmeal without making other modifications. Steel-cut oats are moister and require a longer cooking process than rolled oatmeal. It is possible to modify it to make it work, but I haven’t tested it, so I cannot offer any suggestions.

INGREDIENTS

  • 1 1/2 cups mashed banana (3 bananas) ($0.63)
  • 1/3 cup brown sugar ($0.12)
  • 2 large eggs ($0.46)
  • 1/2 tsp salt ($0.02)
  • 1/2 tsp vanilla extract ($0.15)
  • 1 teaspoon baking powder ($0.02)
  • 1/4 teaspoon cinnamon ($0.02)
  • 1/8 tsp nutmeg ($0.02)
  • 2 cups milk (0.75)
  • 2 1/2 cups old-fashioned rolled oatmeal ($0.45)
  • 1/2 cup chopped walnuts ($0.60).

INSTRUCTIONS

  • Preheat the oven to 350oF. Use a fork to mash the bananas (about 1.5 cups).
  • Combine the mashed bananas with the brown sugar and eggs in a large bowl. Add the cinnamon, brown sugar, eggs, salt, vanilla, baking powder, cinnamon, nutmeg, and salt. Mix all ingredients.
  • Mix the milk with the flour until well combined.
  • Stir in the rolled oatmeal and chopped walnuts.
  • Place the oat mixture in a 9×9-inch casserole and place in the oven. Bake the mixture for 45 minutes or until it, turns golden brown around the edges and top.
  • Keep warm, or refrigerate to enjoy cold.
