BACON SCALLOPS WITH GARLIC BUTTER SAUCE

The most delicious butter sauce, crispy bacon, and tender scallops that melt in your mouth. So easy yet so fancy!

Valentine’s Day will be here tomorrow. If you don’t have any ideas, you may still have some tricks up your sleeves.

I’m dead serious. You don’t need to worry about making a Sunday dinner reservation. You’ll find chaos everywhere you go.

Stay in and sear your scallops. Add bacon, butter, and lots of butter. Boom. You’re done.

Ingredients

  • Four slices of bacon diced
  • Scallops 1 pound
  • To taste, add Kosher Salt and freshly ground Black Pepper
  • Half a cup of unsalted butter
  • Three cloves garlic, minced
  • Half a teaspoon of dried oregano
  • Half a teaspoon of dried basil
  • Optional: 1/2 teaspoon crushed red pepper flakes
  • Fresh parsley leaves, two tablespoons

Instructions

  • Heat a large pan over medium-high heat. Cook bacon until crispy and brown, approximately 6-8 minutes. Drain the excess fat, reserving one tablespoon of it in the skillet. Transfer the bacon to a plate lined with paper towels.
  • Then, remove the side muscle and rinse the scallops with cold water. Pat them dry. To taste, season scallops with pepper and salt. Add scallops in a single row to the pan in batches. Cook, flipping the scallops once, until golden and translucent at the center. This should take about 1-2 minutes. Keep warm and set aside.
  • Melt butter in a skillet. Add the garlic, oregano, and basil; season to taste with salt and black pepper. Cook, stirring often, until fragrant (about 1-2 minutes). Stir in the bacon and scallops.
  • Garnish with parsley if you wish.
