COCONUT CHICKEN TENDERS

Crispy, crisp chicken tenders are a surefire hit with the whole family. It’s quick, easy, and convenient – great for busy weeknights.

These are not your childhood chicken nuggets. Nope. These chicken tenders are a thousand times better when they’re covered in sweet coconut goodness. They have a tropical flair.

These babies are incredibly easy to make with pantry items that you probably already have. These are a hit with both adults and children!

When you are ready to serve them, you can dip the fried chicken in your favorite dipping condiments, such as ketchup or ranch, Buffalo sauce, sweet Thai Chili Sauce, BBQ sauce, etc. The sky’s the limit! We tried a variety of spices, and they were all delicious!

Ingredients

  • 1 cup vegetable oil
  • Cut into strips 2 pounds of skinless and boneless chicken breasts
  • To taste, add Kosher Salt and freshly ground Black Pepper
  • Two large eggs
  • Soy sauce, one tablespoon
  • Optional: 1 teaspoon Sriracha (optional).
  • Half a teaspoon of garlic powder
  • 1/4 teaspoon of ground ginger
  • Original Bisquick ™ Mixture, 1 1/2 cups
  • 1 cup sweetened coconut shredded
  • Fresh cilantro leaves chopped into two tablespoons

Instructions

  • Heat vegetable oil in a large skillet on medium-high heat.
  • Season the chicken with salt and black pepper to taste. In a large mixing bowl, combine eggs, Sriracha sauce, garlic powder, and ginger with two tablespoons of water.
  • Combine Bisquick Mix and Coconut in a large bowl.
  • Dip each chicken piece into the egg mixture and then coat with Bisquick.
  • Add the chicken in batches to the skillet. Cook until golden brown and crispy. This should take about 3-4 minutes per side. Transfer the chicken to a plate lined with paper towels.
  • Garnish with cilantro if you wish.
