Egg Waffles with Romesco & Goat Cheese

Don’t you dare limit your waffle maker (affiliate link). She can run wild. Let her run free from waffle batter.

It’s no secret that scrambled egg is quick, easy and nutritious. They can be a lifesaver on those nights when you need to run (lol, pun intended) for something fast. You can add vegetables. Protein? Come ‘atcha. Cheese? Why not?

We wanted to make this meal, which is a regular and perfectly acceptable meal, more enjoyable. We are now in the longest and shortest month of the year, February.

Scrambled eggs with a light puffiness, topped with bacon, spinach, or whatever other veggie/protein combination you like, hashbrowns, and plenty of cheese.

Ingredients you’ll need to make these Egg Waffles

This little egg waffle maker can be whatever you want it to be. We like to be 100% maximalist, but how much is enough? We go overboard with toppings. After all, this is a party.

Here’s where you should start:

  • eggs
  • Hashbrowns frozen (or a grating of potato will do)
  • Shredded cheese
  • Garlic powder and salt
  • Bacon, pancetta, or cooked sausages (optional).
  • Spinach (optional, but why not add a bit of green to it?)
  • Top with cheddar cheese (for extra golden-brown-cheesy spots). non-negotiable.)

This is how we would like it to end:

  • goat cheese
  • Peppers and garlic confit
  • avocado
  • The romesco sauce can be purchased in a store or made at home.
  • chives
  • hot sauce!

See?! There’s no holding back. This is an amazing combination. The beauty of an egg-waffle party is you can make your guest list. So, let your imagination run wild!

Let’s Make Egg waffles.

Mix the ingredients and waffle. It’s as simple as that.

If you need a bit more help, we’ll give it to you:

  1. Combine all of your base ingredients.
  2. Pour about half to three-quarters cup on a waffle maker. You may need to use a small amount of cooking spray, depending on the quality of your nonstick.
  3. Cheddar chunks. This is a must-have. Place a few cheese slices on top of the casserole before closing it. This will give you a golden brown cheesy top. Once the light has gone out, check to see if the potatoes are softened and that the cheese is golden. It usually takes 1-2 minutes, but if you want to be sure it’s done, flip it and add a minute.
  4. Add all the toppings you want! We mean it. Enjoy yourself.

Egg Waffles Your Way

You can’t go far wrong with the toppings displayed. HELLO, garlic & peppers confit is basically garlic & peppers that are slow-simmered until buttery soft ….why would you not put that on everything? Why would you turn away from all of the flavor explosions available?

We did say that these are fully customizable. You can swap out the veggie or breakfast meats as you please. You can play around with the toppings. Add some salsa, sour cream, black beans, and pepperjack cheese for a Tex-Mex twist. This fun broccoli cheddar version uses cooked rice in place of hashbrowns and includes broccoli bits, bacon, and all the cheese. Perhaps you’ll be making a caramelized onions version?

You could also dip yours in ketchup. Each to their own.

Oh! What if you gave everyone an egg waffle, and in the middle, there was a toppings table? This could be fun!

Ingredients

Egg waffles:

  •  Four eggs
  •  1 1/2 frozen hashbrowns (Or just grated potatoes work too)
  •  1/4 You can also find out more about pancetta. You can also find out more about cooked sausage (optional)
  •  1/4 shredded cheddar cheese. See FAQs for additional cheese options
  •  A few shakes of Garlic powder
  •  1/2 – 1 The following are some examples of the use of Salt
  •  1/2 spinach Torn or cut into small pieces (optional).
  •  2 Ounces You can also find out more about the following: cheddar cheese To put on top for extra golden-brown cheesy spots

Peppers with Garlic Confit:

  •  Three tablespoons olive oil
  •  One lb. mini sweet peppers Sliced into rings
  •  3 Cloves You can also find out more about the following: Sliced into thin pieces
  •  One tablespoon of Red wine vinegar
  •  Half a teaspoon Salt

Egg Waffle Toppers:

  •  1/4 goat cheese
  •  One avocado
  •  1/4 romesco sauce Notes on store-bought items You can also find out more about the following: )
  •  2 Tablespoons chives
  •  2 Tablespoons hot sauce

Instructions

  1. Prepare your garlic and pepper confit. In a medium-sized skillet, heat the olive oil. Add the peppers to the skillet and cook until they are brown and soft. Stir only occasionally so that you can get a nice browning. I cook them between 20 and 30 minutes. Add the garlic to the peppers during the last 15-20 minutes. This will make it golden and soft. Add the vinegar in the previous five minutes to give it a little zip and remove any brown bits that may have accumulated on the bottom of your pan.
  2. Combine the ingredients for your egg waffles.
  3. Pour 1/2-3/4 cup on a waffle maker, depending on its size. I spray my waffle maker with cooking spray, but it’s not always necessary if the nonstick material is good.
  4. Put the lid on and place the cheese pieces on top. Check that the eggs and veggies are cooked when the light turns off. Also, make sure the cheese on top is golden. Transfer carefully to a serving plate. If yours hasn’t been done, flip it over or wait another minute.
  5. Add all the toppings you want! I love goat cheese, peppers, garlic confit, romesco and avocado. Also, lots of salt, pepper, and chives. My girls love ketchup. We all win!
