Crispy Chicken Tika Bowls with Mint Sauce

This chicken tikka dish is a must-have for your stomach and heart. The chicken tenders are brushed in your favorite tikka sauce, then roasted until crisp and crunchy, with some pickled onions and creamy slaw. They’re all served on a bed of nutty, light quinoa with a drinkable mint sauce.

It’s here. This is a great snack for lunch, dinner, or bedtime. We can’t stop eating this. It is so easy to make. This is also super flexible and easy to make, so you can be sure that it will become your new best friend.

This is not chicken tikka as it is known in Indian cuisine, where marinated pieces of chicken are baked or grilled on skewers using a tandoor. It’s not even the full chicken tikka, which is a curry version of chicken tikka that is simmered with a creamy spiced sauce over rice. We’re instead borrowing that delicious, deeply spiced flavor by using our favorite jarred masala sauce. Then we give some easy crispy chicken a brush and bake. This is definitely something different, but it’s exactly what we want.

The Ingredients you’ll need to make these bowls

There are many ingredients, but they all add flavor to this dish! While we make the drool-worthy mint sauce ourselves, we rely on pre-made products and those from stores for everything else. And you can do it too!

The bowl-build:

  • Crispy breaded Chicken (Store-bought)
  • You can also buy tikka masala in the store.

  • Cucumbers sliced or diced
  • Pickled red onion
  • Slaw (you guessed right…store-bought mixture)

Mint sauce

  • Mayo or plain Greek yogurt
  • Salt

If you’re looking for a quick and easy lunch or dinner, there are some great homemade options. For example, you can make a tikka masala, slaw, or crispy chicken. Grab those frozen chicken tenders, open up that sauce jar, and rip the bag of slaw mixture.

Let’s make Chicken Tikka Bowls.

This version is our favorite, and it’s a breeze. This is a simple recipe. A little slicing, dicing, and sauce blending to make your bowl chompy.

  1. Crispy chicken. Cook as per the package instructions, then brush with tikka masala and return to oven for five additional minutes.
  2. Mint Sauce. Place all ingredients into the food processor or blender and blend until smooth.
  3. Bowl Assembly. Add quinoa to your bowl, along with crispy chicken, slaw, and pickled red onion. Don’t forget the mint sauce!

You’ll be amazed at how beautiful and colorful everything will look when you put it all together. For a tiny moment, you may want to admire it, but we ask you not to waste time. GET. AT. IT.

You Can’t Help But Love These

These bowls can be made to suit your tastes. If you don’t like crispy chicken, it’s fine. We can’t be good friends. (Just kidding! Maybe.) You can also use regular chicken breasts that have been pan-seared. You can also use sweet potato or tofu. I can’t recommend those crispy frozen chicken fingers enough.

They are also easy to make. There are many pre-made or store-bought choices if time and patience are an issue (we always have both), but everything tastes so fresh. There are ways to make it yours. How about breading and frying your chicken? Get at it. Want to make your tikka sauce? Here’s a great one. You don’t need to worry if you don’t have pickled onions already in your refrigerator. They can be thrown in a jar in seconds and pickled in no time. They’re ready to be used for the hundred other times you will make these bowls in the coming week.

Ingredients

Crispy Chicken Tikka bowls

  •  4 Pieces of Crispy breaded Chicken ( Homemade option (or store-bought)
  •  1/2 tikka masala sauce ( Homemade option (or store-bought)
  •  3 Quinoa
  •  1 Cucumber Sliced or diced
  •  Pickled red onion

Slaw

  •  2 Coleslaw shredded
  •  Three tablespoons Mayo
  •  2 Tablespoons vinegar
  •  Half a teaspoon Salt

Mint Sauce

  •  1/4 mint leaves
  •  1/4 cilantro leaves

Instructions
