Mix the avocado oil, honey, and vanilla extract in a bowl. Please put it in the bowl of muesli, and mix until all ingredients are evenly coated.
Cover an 8×8-inch baking dish with parchment, then put the muesli mix in the pan. Make sure to press the muesli very firmly into the baking pan to pack it down. Bake in the oven, at 350° F, for 20-25 minutes, until golden brown.
Allow the bars to rest on the counter, remove them from the pan, and slice them into equal bars.

2 1/4 cups Oats rolled in a roll (gluten-free certified if required)
1/4 Cup Coconut shredded unsweetened
1/3 Cup chopped walnuts
1/3 Cup Sliced almonds
1/3 Cup Pumpkin seeds
2 Tbsp chia seeds
1/4 Cup mini chocolate chips (optional)
1/2 tsp cinnamon
1/4 tsp salt
1/2 Cup Honey
1/3 Cup avocado oil (can sub-melt coconut oil )
1 tsp vanilla extract

Instructions
Preheat the oven to 350° F and cover an 8×8 inch cake pan using parchment.
Mix the oats, coconut shredded and almonds, walnuts, pumpkin seeds, chia seeds, salt, and cinnamon in one bowl.
Mix the avocado oil, honey, and vanilla extract separately in a bowl.
Combine the moist and dry ingredients until they are well combined.
Put the muesli bars into the pan that measures 8×8 inches and press them very well in the dish! Continue pressing until the bars are packed very well. (I prefer to use an additional sheet of parchment paper and lay it on top of the bars as I press them down so my hands don’t get smudgy.)
In the oven, bake 350 degrees for about 20 to 25 minutes or till golden brown.
Let the bars completely cool before cutting them. (This is crucial because otherwise, the bars will fall apart.)
Cut into bars.
