I could be a better baker. Don’t get me wrong – I LOVE baking. I love baking so much that I sometimes want to bake, not eat. Although I can follow most recipes, they sometimes turn out differently than expected. I long to be able to bake the entire creations I imagine. It’s the reason I am constantly in awe of the fantastic baked goods that keep popping up in my Instagram feed.
Amy, Constellation Inspiration is one of my favorite people and an IRL friend I have been following forever. Her Asian-inspired twists on traditional baked goods are a delight. Salted egg yolk is a favorite of hers, sweet or savory. She also loves chewy mochi, and her cookie photos make me hungry.
Amy has just released Blooms & Baking, a gorgeous new cookbook that features delicious baked treats featuring florals. I found it fascinating and wanted to make it. I also saw matcha strawberry Neapolitan soft sugar cookies on install. I knew I had to make them, even though this post was an ode. Her approval blessed me, and here we are!

Hot-take Neapolitan Ice Cream is the best flavor. Are you agreeing or disagreeing? As a child, I loved Neapolitan. Although I didn’t eat all three flavors, I loved the choice of strawberry, chocolate, or vanilla. There are many better flavors available than Neapolitan. I would if it were a matcha strawberry vanilla scenario with sugar cookies and chewy mochi bits. This would be amazing.
These cookies are an Asian version of Neapolitan. Matcha is used in place of chocolate. Although the strawberry and vanilla cookies are identical, many people have made them with different flavors like hojicha and sakura.
This recipe’s genius is its soft, chewy sugar cookie base. Amy’s book has the same formula but with a lavender twist. The dough is easy to make and can be flavored with any flavor you like. When adding different flavors to sugar cookies, it is important not to alter the dry-to-wet ingredient ratios. Matcha is a powder, and the strawberry is due to freeze-dried strawberry paste.
What are freeze-dried strawberries?
The water content of frozen strawberries has been removed. The strawberries are frozen quickly to preserve their cell structure and shape. After that, the water is evaporated in a vacuum. The result is small, dehydrated strawberry pieces when frozen. They can be used in baking or made into water. Freeze-dried strawberry powder is made by pulverizing frozen strawberries in a food processor. The dried fruit can be found in either whole or powder form.

How can I make matcha vanilla Neapolitan cookies?
