THE HUMMUS LUNCH BOX

Are you ready for the next instalment of the no-cook Lunch Box series? Although the Hummus Lunch Box is a timeless recipe that many of you may have tried, it deserves to be included in this series. It is versatile and always a crowd-pleaser. Below are a few ways to eat and serve the Hummus Lunch Box.

WHAT’S IN THE HUMUS LUNCH BOX?

Hummus, cucumber, grape tomatoes and pita bread are all included. This lunch box is simple and easy to prepare. I also love “snacky” finger foods. Only prep work was required to slice the cucumber and drain the olive jar. ALDI sells very affordable hummus, so I used store-bought hummus. However, you can make your hummus and experiment with different flavours.

SERVING OPTIONS

As I said in the intro, there are many ways to eat this lunchbox. You can eat it in a “snacky”, eating just a bit of each item, etc. Here are some other options.

  • You can make it into a pita sandwich. Instead of cutting your pita bread into triangles as in my photos, you can leave the pita in its entirety and then, when you sit down to eat lunch, spread the hummus inside. Add cucumber slices, olives and tomatoes and enjoy it as a sandwich.
  • It can be made into a salad. Make a separate bowl with mixed greens, and then, when you are ready to eat, put the vegetables and hummus in a separate bowl. You can also eat it like a huge sandwich. A dressing might be a good idea. I recommend a vinaigrette such as Greek, Italian, or Caesar.
  • ALTERNATIVE INGREDIENT IDEAS

This hummus lunchbox is flexible, just like the other no-cook lunch boxes. Here are some alternatives if you don’t like the ingredients in my hummus lunch box:

  • Pita chips and pretzel crackers can be substituted for pita bread
  • Feta cheese cubes
  • Marinated white beans
  • Celery sticks or carrot sticks
  • Bell peppers
  • Grilled chicken sliced

HOW LONG WILL THE LUNCH BOX BE STORED?

This lunchbox is very resistant to refrigeration. It will last approximately 5 days in the fridge, depending on how fresh your ingredients are when they are made and the temperature inside your fridge.

These divided glass meal prep containers were purchased on Amazon. Below is a link to the product. (P.S. These containers came in three pieces, and the recipe makes FOUR lunchboxes. I decided to eat the fourth piece on a plate that day.

THE HUMMUS LUNCH BOX

This Hummus Lunch Box is a classic cold lunch option. This is the quickest, most simple, and least-effort no-cook lunch.

INGREDIENTS

  • 1 cucumber (1.29)
  • 2 pita loaves of bread ($0.66)
  • 1 cup hummus (1.95)
  • 1-pint grape tomatoes ($1.99)
  • 1 6oz. jar kalamata olives ($2.15)

INSTRUCTIONS

  • Cut the cucumber into slices and divide the pita bread into triangles.
  • Divide the hummus mixture, tomatoes, olives and pita triangles among four containers. Please keep it in the refrigerator for up to five days.
