GRAVY AND VEGETABLES

I have been enjoying looking through old recipes from the Great Depression. I am always amazed at how simple they are. These recipes are always simple, with only a few ingredients and rarely seasoned but still filling. The simplicity of these recipes inspired this Vegetables & Gravy recipe. However, I ensured it was properly seasoned to suit today’s tastes.

This recipe is perfect for when you need something quick, easy, and filling, using ingredients you may already have at home. It’s a mix of potato soup and a chicken pot pie without the chicken. It’s the best thing I have ever had in my life. No. This dish is perfect for those with limited funds.

What are vegetables and grains?

Cubed potatoes are first boiled in vegetable broth. The liquid is then seasoned with herbs and spices and thickened with a milk-flour slurry. We add a bag with mixed frozen vegetables to add color, texture and flavor. We finish the dish with butter to add creaminess, salt, and flavor. It’s simple, filling and delicious!

WHAT ELSE CAN YOU ADD?

Here are some suggestions if you have extra ingredients and want to make this dish even more delicious.

  • Add shredded cheese to the top
  • Brown the bacon first in the pot. Then, top the dish with the crumbled bacon
  • You can use your favorite seasoning mix (everything from Cajun to Lawry’s).
  • To make it more like a pot pie, add chopped chicken (a great way to use leftover rotisserie chicken!
  • Add dumplings

HOW TO SERVE GRAVY AND VEGETABLES

This would be a one-bowl meal that I consider simple and would not make any side dishes. For the gravy-soaked bread, I may add some crusty bread to my bowl, but other than that, all I need is contained in that one bowl. A simple roast vegetable is a good option if you need it. You might try broccoli or Brussels sprouts.

This gravy is thickened by flour and can gel up when it’s refrigerated. It will still be a little loosening when reheated. You can also add milk or water to make it even thinner if necessary.
